I spent yesterday afternoon baking this coconut pie~ I baked it for my twin brother, Tony. He LOVES coconut pie.
Milton cut the first piece~ sorry Tony!
In a small saucepan, combine the sugar, cornstarch and salt.
Stir in 2 cups of milk.
Cook and stir over medium-high heat until thickened and bubbly.
I use a double-boiler to cook my filling. If I didn't, it would scorch. My Mother can cook pie filling in a single saucepan and it never scorches. Why is this?
Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat.
Gently stir in coconut, butter and vanilla until butter is melted.
Pour hot filling into a baked pie crust.
In my opinion, the best "store bought" crust is Marie Callender's...I always have several in my freezer. I love "home-made" crust...but, Marie has the secret!
For meringue, in a small mixing bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust.
Sprinkle with flaked coconut. Lots of coconut.
Bake at 400 until the meringue is golden.

I saw a picture of this pie and then went crazy the next day trying to figure out where to find it again. This is one of the prettiest pies I've ever seen. I'm going to put it on my Pinterest board so I won't have to search again. My husband loves coconut pie, and I do believe it's time to make one for him. I'll be using your recipe and photos to try to make one as pretty as yours!

Uh, oh, looks like I'll have to make your coconut pie, too. The chocolate chip cookies may have to wait. :-) I am not sure I can recreate that lovely mountain of meringue and coconut but I'll try as Coconut is my favorite pie. It used to be chocolate pie but I have never been able to replicate the delicious tast of my mother's chocolate pies and even Baker's Square doesn't measure up!

Yum-oh! Guess I'm Rachael Ray now. Your pie really makes me think of my Granny (my Daddy's maw as he called her) and Grandmother (my Mama's Mother as she called her). God Bless and Rest their souls. There's a difference between a Granny and a Grandmotehr ya know. It's raining here today in sunny North Florida and whenever it rains and is dark and dreary I'm always nostalgic.
