In a medium bowl, combine flour, sugar, baking soda, baking powder, cinnamon, cloves, nutmeg, allspice, and salt.

I grated 4 cups of carrots for 2 loaves of carrot bread....
.....and I enjoyed every minute of it.

Add oil, eggs, carrots. Stirring until blended.

Pour batter into the prepared pan.
Lightly butter an 8" loaf pan and dust with flour.
Preheated oven~ 350
Bake 25 minutes, or until a toothpick inserted in the center comes out clean.
Out of the oven...
Remove bread from pan and cool on a wire rack.

Ready for frosting.
Cream Cheese Frosting~
3 oz. cream cheese, softened
3 T butter, softened
1 1/2 cups powdered sugar
Beat cream cheese, butter, and vanilla with an electric hand mixer on high speed until smooth. Reduce speed to low and gradually beat in sugar.
Sprinkle with chopped walnuts.
Carrot Bread~
1 t butter, softened
1 cup all-purpose flour
1/2 sugar
3/4 t baking soda
1/2 baking powder
1/2 cinnamon
1/4 t ground cloves
1/4 t nutmeg
1/4 t allspice
1/4 salt
1/3 cup vegetable oil
2 eggs, lightly beaten
2 cups grated carrots
walnuts, (optional)
