It's like having a carrot cake in a loaf...
In a medium bowl, combine flour, sugar, baking soda, baking powder, cinnamon, cloves, nutmeg, allspice, and salt.
I love my 'Foodmaster'~ shedder, stringer, thin slicer, waffler, thick slicer...
(1950's) I bought it on Ebay.
It's the best gadget I have in my kitchen.
I grated 4 cups of carrots for 2 loaves of carrot bread....
.....and I enjoyed every minute of it.

Add oil, eggs, carrots. Stirring until blended.
Pour batter into the prepared pan.
Lightly butter an 8" loaf pan and dust with flour.
Preheated oven~ 350
Bake 25 minutes, or until a toothpick inserted in the center comes out clean.
Remove bread from pan and cool on a wire rack.

Ready for frosting.
Cream Cheese Frosting~
3 oz. cream cheese, softened
3 T butter, softened
1 1/2 cups powdered sugar
Beat cream cheese, butter, and vanilla with an electric hand mixer on high speed until smooth. Reduce speed to low and gradually beat in sugar.
Sprinkle with chopped walnuts.
Carrot Bread~
1 t butter, softened
1 cup all-purpose flour
1/2 sugar
3/4 t baking soda
1/2 baking powder
1/2 cinnamon
1/4 t ground cloves
1/4 t nutmeg
1/4 t allspice
1/4 salt
1/3 cup vegetable oil
2 eggs, lightly beaten
2 cups grated carrots
walnuts, (optional)

I am just getting ready to make my "Carrot Pudding"...similar ingredients, but baked in a loaf pan in a water bath so its really moist. No frosting. I like it best alongside the turkey with GRAVY on it. I also have a grater/ shredder similar to yours called a "Saladmaster", bought in the 80's from a "Saladmaster" home rep. I love it!

Tina, that looks wonderful! I make a killer carrot cake but I like that this is smaller. Looks so pretty on the cake plate and doily. I always enjoy a visit to your cottage kitchen.

I must tell you that your Chocolate Cobbler is a favorite at my church potlucks. I have taken it every time for the last several months and every time it is completely gone! One tiny little girl (14 years old) told me she had had three servings! I had to laugh at her. Many people have asked me for the recipe and I have blogged about it. Our Pastor loves it too, but always misses out at Potlucks, I think the teens get to it before he does. So I made it for him and his wife when I had them over for dinner. Needless to say, he loved it. Thanks so much giving out your wonderful recipes.
