I couldn't wait to try this Green Beans and Red Potatoes recipe.
My sweet Monica shared it with me.
The recipe is from Bob's Aunt Sentis.
I love it cause they taste like 'fresh garden green beans and new potatoes'...
......but you buy the potatoes and the green beans in the grocery store.
The green beans are 'fresh frozen'. The potatoes are the little 'red skin'.
Very easy ~
Cover potatoes with water.
Cook until tender.
Add a bag of fresh frozen green beans on top of potatoes.
I covered the pot to allow the green beans to wilt.
Season with bacon grease/drippings. Kosher salt and pepper.
Cook until green beans are nice and tender.
The aroma while cooking was...

I've never made green beans and potatoes! I know, how can I live in Indiana and never have made them!? But I haven't. I love to eat them though. So now that I have 'what to do' I think I'll try making them!

in the south these are known as smothered beans! i cook mine with bacon in them. YUM! i love anything smothered!

That is a Mobile AL best kept secret....except try it with fresh pole beans instead of the skinny green beans. Pole beans and new potatoes with a side of cornbread was a regular weekly dinner out of the garden when we were growing up. They get even better a couple of days later! And if you have a ham bone left in the freezer....well, then you've just got yourself some Mobile Alabama "eatin"

I keep this in the fridge almost all the time to snack on, instead of a piece of something else with too much fat, sugar etc. Green beans and potatoes just get better and better. I like it with really good olive oil too. Or Or Or Or!!!!! When I get a huge bag of green beans at the market, I cook them right away, so I can have them then and the next week too! I have never bought enough to freeze!!!Heh Heh.

My grandmother always made her green beans like that, and I never could understand why my mother didn't! Obviously, I followed in my grandmother's footsteps, and we love them!
