My favorite recipe for pimiento cheese spread~
Shred your own cheese instead of buying preshredded cheese. Let the spread sit at room temperature to soften before slathering it on a sandwich.
Homemade Pimiento Cheese Spread~
1/2 cup mayonnaise
1 4-oz. jar diced pimiento, drained
1 teaspoon Worcestershire sauce
1 8-oz. block extra-sharp Cheddar cheese, shredded
1 8-oz. block sharp Cheddar cheese, shredded
1/2 cup pickled jalapeno pepper slices, drained and chopped.
Combine first 3 ingredients in a large bowl; stir in cheeses. Stir in chopped pepper. Yield: about 4 cups.
Note: To blend in the shredded cheeses more easily. first let them sit at room temperature for 20 to 30 minutes to soften.
Makes a great food gift~Spoon cheese into pretty gift jars.

I've never tried to make pimento cheese spread before even though it's one of my favorites. I always buy those little plastic containers at the grocery store, but I loving the idea of making it from scratch! I'm going to try and make this tonight. It looks yummy.

Oh! My! Word!! This sounds so good right now. I've never put Worcestershire sauce in mine but will give it a try. Yummy.

I am making tuna, apple, celery and pecan salad today. Just add a little mayo. I like Helman's light. Tomorrow will be your pimento cheese. Love this type of food when the temps are >100. We are due to cool off this weekend--all the way down to the 90s!!

I do a similar mixture, although no jalapenos. I put slivered almonds in mine. Yummy!

This is really similar to the one I make. The only difference is I use 1 - 2 fresh jalapenos - chopped fine and a couple of chopped green onions. Try this sometime - I think you'll like it!

Tina, I use my pimiento cheese spread on
toasted slices of french bread and then pop under the broiler until a little melty and slightly browned......yummy.

You know I've eaten pimiento cheese my whole life - but it just struck me that I have no idea what a pimiento is? Is it a roasted red pepper? I've never heard of a pimiento farmer, but stranger things have happened! ;-)
