Muffins just make people happy!
Blueberry Streusel Muffin~
Prepare streusel topping (listed below).
Heat oven to 400. Grease the bottoms of 12 medium muffin cups or insert paper muffin cups.
Beat milk, oil, vanilla, and egg.
Combine flour, sugar, baking power, and salt.
Add to liquid mixture~ just until flour is moist. Batter will be lumpy.
Fold in 1 cup fresh blueberries or 3/4 cup frozen (thawed and drained)
Divide evenly among muffin cups.
Sprinkle with 2 teaspoons of the streusel topping .
Bake 20-25 minutes ...
until golden brown...
Makes 12 old fashioned blueberry streusel muffins...

Streusel Topping~
1/4 cup all purpose flour
2 tablespoon packed brown sugar
2 tablespoons firm butter
1/4 teaspoon cinnamon

I just put up 28 jars of blueberry jelly and 28 jars of mayhaw jelly, now I wish I would have saved some blueberries for those muffins, they sure look delious. Good job Tina you always make us hungry.:0
