I baked this banana cake over the weekend~ it's not anything like banana bread. This cake is very light and moist. You will need 3 ripe bananas, 1 yellow cake mix, and 1 can of vanilla frosting.
It is super easy, and super GOOD!
Banana Cake
1 yellow cake mix
2 eggs
1/4 cup oil
1 cup water
2 ripe banana's
1 can of vanilla frosting and 1 more banana
Mix cake mix and the rest of the ingredients in a large bowl with mixer.
Pour into a cake pan that you have sprayed. Bake for 45-50 minutes or test done. Remove from oven, let cool for 10-15 minutes.
Remove from pan and invert onto a cake plate.
Place one can of vanilla frosting into microwave and melt slightly. Mash banana in a bowl, pour slightly melted frosting with banana, mix well. Pour the icing on the top, so it runs down the sides.
Optional~ Add a cup of walnuts to the cake mix.

I made the banana cake today and it was wonderful!! It reminds me so much of a banana cake my mom used to make when I was a child. She added coconut between the layers, though and it was good that way...I think next time I make it, I will put coconut on top. I think it would also be good with some pinapple mixed into the icing.
