Milton came home to creamy potato soup with crusty french bread.
very good soup for a cold, cold day!
In a large saucepan cook 4 slices of bacon. Set bacon aside, along with 3 tablespoons of bacon drippings.
Add 3 potatoes, peeled and chopped, 1 onion chopped, 1 carrot chopped, 1 cup chopped celery to bacon drippings. Add enough water to cover vegetables and cook over low heat until tender, stirring occasionally.
Stir in 2 cups milk...
salt and pepper.
Bring to a boil.
Sour cream mixed with flour and paprika is used as thickener.
In a separate bowl, stir together sour cream, flour and paprika.
Gradually stir 1 cup of hot soup mixture into sour cream mixture.
Pour sour cream mixture into soup mixture. Cook until good and bubbly hot. Top with chopped bacon pieces.

Mmm - I was just looking at another potato soup recipe you made over a year ago that had velveeta cheese in it.
We LOVE potato soup. I am going to make some soon.

It's cold here in Macclenny,Florida (30 miles weset of Jacksonville) this weekend. I'm in a soup mood so I think I'll try this recipe. I've never made potato soup with sour cream in it before.

Thank you Thank you!!!!! I have a ton of fresh basil left that i have to make into a pesto today so it doesnt go bad..i figured id make a pesto on pizza dough or focaccia bread, but wanted a soup to go with it....now i found it THANKS!!! I just love your blog :-)

Looks like a great recipe. Never heard of your method of thickening. I use sour cream in my potato soup but add it at the end. I just mash some of the potatoes to thicken things up. Next batch of potato soup I make will be with your recipe. Thanks.

I love potato soup, but could not handle the bacon drippings or bacon. LOL I think I got the cheesy potato soup recipe from you? With the velveeta? I don't measure though, I cook like my grandmother.
