I spent yesterday afternoon baking this coconut pie~ I baked it for my twin brother, Tony. He LOVES coconut pie.

In a small saucepan, combine the sugar, cornstarch and salt.
Stir in 2 cups of milk.
Cook and stir over medium-high heat until thickened and bubbly.
I use a double-boiler to cook my filling. If I didn't, it would scorch. My Mother can cook pie filling in a single saucepan and it never scorches. Why is this?
Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat.
Gently stir in coconut, butter and vanilla until butter is melted.
Pour hot filling into a baked pie crust.
In my opinion, the best "store bought" crust is Marie Callender's...I always have several in my freezer. I love "home-made" crust...but, Marie has the secret!
For meringue, in a small mixing bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust.
Sprinkle with flaked coconut. Lots of coconut.
Bake at 400 until the meringue is golden.

That is a beautiful pie. I love to make pies but I don't make cream pies and lately I've just had a hankerin' for it - the kind my grandma used to make ~ no store-bought pudding there!

My dad loved Coconut Cream Pie. I was hungry for it awhile back but my husband wanted Banana Cream so that is what I made. You have made me hungry for the Coconut Cream Pie again. My mouth is watering. :-) Debbi

Looks great! How do you get your meringue so high? I cook my filling in the microwave & it works great! I can't conquer the double boiler.

Yum-oh! Guess I'm Rachael Ray now. Your pie really makes me think of my Granny (my Daddy's maw as he called her) and Grandmother (my Mama's Mother as she called her). God Bless and Rest their souls. There's a difference between a Granny and a Grandmotehr ya know. It's raining here today in sunny North Florida and whenever it rains and is dark and dreary I'm always nostalgic. Oh, Tina....That pie looks wonderful, and I am so glad you admitted to using a prepared pie crust. Honestly, I simply can not make a decent pie crust from scratch!
