My thanks to Pat (Monica's cousin) for the "fresh" pecans. Straight out of her family's TEXAS pecan grove.
THANKSTHANKSTHANKS Pat!
YOUR pecans made my "pecan pie" the best I've ever made!
Pecan Pie~
1/3 cup melted butter
1 cup sugar
1 cup light corn syrup
1 teaspoon salt
1 tablespoon vanilla
4 eggs
1 9 inch pie crust
1 1/2 pecan halves
Combine the butter, sugar, corn syrup, salt and vanilla in a bowl; mix well. Beat the eggs until very light. Add to corn syrup mixture. Pour into pie shell. Arrange the pecan halves on top. Bake at 350 until the filling is set and a knife inserted comes out clean.

That sounds almost exactly like my grandmother's recipe, except she used 1/2 cup light corn syrup and 1/2 cup dark corn syrup. I don't know why, but that makes it so much better!
Happy New Year!

I use half dark & half white corn syrup.
'most ANY pecan pie is wonderful!
As if junk doesn't cling to me worse than
white lint to black cotton, now I see how
decorative empty detergent boxes can be.
The teacup wreath is quite charming, too.
I save just about everything--just do not
have the creativity gene that would enable
me to think outside the box and actually
make use of those bottles, boxes, cans,
scraps, and sundry discards.

thanks for inspiring me to make a pecan pie! I hadn't made one since the carmel pecan pie at Thanksgiving (which was soooo rich)....this one was just perfect!
BTW, I didn't see a baking time on your recipe, mine took about an hour....
thanks again!

Yum. We do pecan pie here also, and use only dark corn syrup, plus a bit of black strap molasses. It's my son's favorite pie, about the only sweet thing he'll ever eat.
We always do brunch on New Year's Day, Eggs Benedict ~

My 6th grade teacher in 1953 told us all to plant pecan trees when we grew up and had a house! She said we would get the most good from that tree!
