Cherry Cream Cheese Tarts~
This is what I've been doing this A.M.~ baking tarts...Valentine tarts. CREAM CHEESE tarts...it's like a cheese cake you can eat in one BIG BITE! ; - )
Place a paper cupcake liner in each cup of muffin pan.
Beat cream cheese with a hand-held electric mixer until fluffy.
Add sugar.
Add vanilla.
Beating well...
Add eggs, 1 at a time.
Beating well after each addition...
Lay a vanilla wafer, flat side down, in each muffin cup.
Spoon cream cheese mixture over wafers.
Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry filling on top.

BTW, that is pure VANILLA extract, right?
I am going to make these for ME since the Feller is working out of state and is not fond of cheesecake anyway.

Good Grief, Tina!!!! HOW do you stay so thin???? I think I gained at least 5 lbs. just looking at this blog! lol.....I must go to the store NOW and get all the ingredients to make these for my dear sweet hubby and daughter for Valentine's day.
